A piece of tongue (in North America boned chuck ) is a part of the beef that is cut up.

When cutting, the neck of the beef and the rib remain together. Together with the cross rib (part 2 in the figure), the chuck results .

The good mixture of fat and lean meat makes the tongue piece very popular in the production of burger patties.
