Beef neck

Beef neck , comb , neck or neck piece is the meat of the beef that carries the head. It is very streaky and has a comparatively high proportion of fat (around six to eight percent) and connective and supporting tissue . Beef neck is mainly used as soup meat or for stews such as goulash , as connective tissue and tendons are largely converted into gelatine by slow cooking or braising . It is hardly suitable for roasting .

The piece of beef neck and the adjoining rib is called the tongue piece .
