Bill Meek'was the head coach of the SMU Mustangs football program from 1957 to 1961. During his tenure, he compiled a 17-29-4 record. His worst season there was his final one, in 1960, when his team went 0-9-1, with the 1 game decided by less than 10 points being the 0-0 tie with Texas A&M. He was also the head football coach at Kansas State from 1951-1954. He compiled a 15-22-2 record there, despite going 2-16-1 in his first 2 seasons.

He also served as the head coach for the University of Houston from 1955 to 1956, compiling a 13-6-1 record. He finished his career with the University of Utah guiding the team to a 33-31 record including an 8-2 record in 1969.
