Açorda / ɐ'sordɐ / (from Arabic ثرد ṯarada "bread to be broken"), a bread soup, is a Portuguese nationaldish. The soup contains u. a. Pieces of bread , eggs , olive oil , garlic and various spices .

The açorda is a typical Portuguese dish made of thinly sliced ​​bread with garlic, finely chopped coriander , olive oil, vinegar , water , salt and poached eggs . It is mainly known in the Alentejo region , but also nationwide. There are many variants of the açorda, for example with shrimp (Açorda de Marisco / de Camarão) or cod (Açorda de Bacalhau).

The eggs are poached in salt water. Garlic, coriander and salt are mashed into a coarse paste, olive oil and vinegar are added, and then the mixture is poured over the bread. The eggs are placed on the bread and the water with which they were poached is poured over them. The açorda is then left to steep for a few minutes.
