Akara or Accara are deep-fried balls made from black- eyed peas that are offered as a snack in many areas of West Africa .

The black- eyed beans are mashed and mixed with onions , salt and pepper . Small balls are formed from the mass, which are fried in coconut or vegetable oil . Akara are usually served with a spicy tomato and onion sauce called kaani . Sometimes they are served as a sandwich in a baguette , especially in Senegal .
