Acetylated starch

Starch acetates are derivatives of starch that belong to the starch esters . This modified starch is used as a food additive and is labeled E 1420.

Manufacturing

Starch acetate is produced by reacting starch with acetic anhydride in a polymer-analogous reaction . Since not all hydroxyl groups react in this reaction, mixtures are formed with different degrees of substitution . The degree of substitution of the individual starch components within a polymer can also vary.

application

They form clear and stable solutions and are used to stabilize frozen foods and dairy products.
