Agnolotti

Agnolotti are an Italian type of pasta , namely filled dumplings from the Piedmont region .

In contrast to ravioli or tortelloni, agnolotti are made from just one strip of dough. For this purpose, a pasta dough is rolled out in strips and the filling is spread over it in small portions. Then the second half is folded over. The square bags are then cut with a baking wheel as with other filled varieties and boiled in salted water. The variations of the fillings are diverse, but are mostly based on braised or roasted meat.
