Tortelloni

Tortelloni are filled pasta from northern Italy that are very similar to tortellini , but larger. They are usually filled with ricotta and leafy vegetables such as spinach or parsley . The filling can also consist of meat ( veal , chicken , pork or mortadella ) and often also of parmesan .

There are variants in which the vegetables are replaced by porcini mushrooms or walnuts . It is typical for the provinces of Ferrara , Reggio nell'Emilia and Mantua to fill the tortelloni with a mush of pumpkins to which grated amaretti is added.

Tortelloni are usually served with melted butter and sage leaves or with Bolognese ragout .
