Alain Passard (born August 4, 1956 in La Guerche-de-Bretagne ) is a French chef who owns the three-star Paris restaurant L'Arpège .

Life

Alain Passard began his apprenticeship at the age of 14 at the Hôtellerie du Lion d'or in Liffré under the direction of Michel Kerever. From 1976 to 1977 he worked at La Chaumière in Reims under Gérard Boyer. From 1980 to 1984 he cooked at Le Duc d'Enghien , in the Casino d'Enghien . There he was awarded two Michelin stars at the age of 26 .

In 1984 he went to the Carlton restaurant in Brussels and was awarded two stars in the following two years.

In 1986 he bought the restaurant L'Archestrate (three stars) from his former mentor Alain Senderens and renamed it L'Arpège. In the same year Alain Passard launched his famous hay schnitzel. It only takes him a year to get his first star and another year for the second. In 1996 L'Arpège received its third Michelin star, which it has retained to this day.

In 2001, he removed red meat from his menu and focused on vegetables. In 2002 he bought his first vegetable garden on the Sarthe to supply his restaurant with first-class vegetables, the second in 2005 and the third in 2008.

In 2010 he received a "Nugget" for his contribution to French culture. and the highest award from the Gault & Millau guide in 2010 with 5 toques. In 2016, the Netflix Chef's Table: France documentary series dedicates an episode to Alain Passard.
