Alain Senderens

Alain Senderens (born December 2, 1939 in Hyères , † June 25, 2017 in Saint-Setiers ) was a French chef of nouvelle cuisine . Le Figaro described him as the inventor of the perfect wine accompaniment to the tasting menu.

Life

Senderens trained as a chef at the Ambassador Hotel in Lourdes . In Paris he worked in the La Tour d'Argent restaurants and from 1963 to 1965 in the Lucas Carton , which he acquired twenty years later. He then became sous-chef at the Hilton's restaurant in Paris at Paris-Orly Airport .

In 1968, Senderens opened the L'Archestrate restaurant in Paris. In 1978 the restaurant received three stars in the Michelin Guide .

In 1985 he bought the Art Nouveau restaurant Lucas Carton , which is located opposite the La Madeleine church . It was also awarded three stars. In 1997 Paul-François Vranken took over shares in the restaurant, which then came into the possession of the Japanese brewer Asahi Beer .

In 2005 he was the only chef to date to give up his three Michelin stars. He said he couldn't cook an affordable menu while maintaining the standards set by Michelin. He named the restaurant in Senderens and had the Art Nouveau restaurant carefully renovated by Noé Duchaufour-Lawrance . He soon found that he only had to ask customers a third of the previous price and was also making more profit. The Senderens restaurant has been awarded two stars by Michelin.

In 2013, Senderens sold his shares in the restaurant to his partner. Together they decide to rename the restaurant Lucas Carton again. In July 2014, Senderens left the restaurant. In 2017 the restaurant was awarded a Michelin star.

Senderens trained a number of chefs, such as Alain Passard , who took over L'Archestrate from Senderens and renamed it Arpège (three Michelin stars), Alain Solivérès (three Michelin stars), Christian Le Squer (three Michelin stars) or Karl Ederer (a Michelin star).
