The old fish smokehouse Eckernförde is a listed building ensemble in Eckernförde in the district of Rendsburg-Eckernförde ( Schleswig-Holstein ). There is a fish smokehouse museum in it. This is intended to remind of the history of Eckernförde as an important location for the fish smoking industry and as a place of manufacture of the Kiel sprat . The concept is described as an adventure smokehouse, since the smokehouse is supposed to be operational again in minimal operation and regular "show smoking" should take place. The museum covers the whole property of the former smokehouse Hopp (1920-1961), the 2004/2005 as a whole ensemble was declared a National Monument. The building at Jungfernstieg 41 was built in 1912/13 according to plans by the architects Wilhelm Kruckau and Carl Reiss; the addition of the smokehouse to Gudewerdtstrasse took place in 1920.

The ensemble consists of:

  • the former home of the Hopp family (1912/13) at Jungfernstieg 41
  • the main building (1920) at Gudewerdtstrasse 71, consisting on the ground floor of an expedition room, smoking room, plug-in room, brewing room and warehouse; and on the first floor from: office , floor and apartment of the authorized representative
  • the plot in between, on which there is a shed with sanitary facilities, which used to be used as a coal store, laundry room and “lounge for women”
  • an area adjacent to the north between Jungfernstieg 43 and Gudewerdtstrasse 69, bought in 1921, on which the Hopp smokehouse had a stable, an outhouse and a woodshed built
  • a garden plot to the south that was purchased in 1925 and is accessible from the cutter's passage and undeveloped

History of the museum

For centuries Eckernförde was shaped by fishing and the fish processing industry. Since 1769 there have been smokehouses in at least 60 locations in the city. In 1922, 535 people were employed in the Eckernförde smokehouse. The year 1925 was a high point: at that time there were 37 companies in the city. Since then the number of smokers in Eckernförde has been declining. In 1934 there were still 18 companies, in 1991 there were four and since 1999 only one.

In view of the former high status of this trade, there were several efforts to get a final testimony to this time. A first attempt in 2003/2004 to turn the former Föh smokehouse into a museum failed.

The success of these efforts did not become apparent until 2012, when the Friends' Association Alte Fischräucherei eV, founded in 2009, was able to acquire the former fish smokehouse Hopp in Gudewerdtstrasse with the help of the city of Eckernförde. This is one of the last two Eckernförde smokers in the entire building structure with Altona ovens . The buildings were then renovated mainly by the members of the association themselves and prepared for museum operation. The opening of the museum took place in 2012; the museum has been in full operation since 2016.
