The Haverland bakery is a German baking company and the oldest pumpernickel bakery in the world.

Jörgen Haverlanth founded the bakery in early modern Soest in 1570 . From 2007 the former family business belonged to heristo AG . The KuchenMeister GmbH took over the company while increasing the deposit in the year of 2010.

history

In the 16th century Soest was one of the most important cities in Germany and was a member of the Hanseatic League . At this time sieges were frequent, so that emergency rations that could be kept for a long time were of great importance. This is how Pumpernickel is said to have been created to counteract hungry times. The line of the Soest Haverland family can be traced back to the 15th century. A branch of the Haverland family was dedicated to the traditional bakery trade from an early age . This also included Jörgen Haverlanth, who lived in Soest as a baker and Richtmann (judge). Jörgen Haverlanth, born in 1570, founded the Haverland bakery that still exists today. According to the family legend, the Pumpernickel recipe was said to have come about by chance. During the Soest feud between 1444 and 1447, the wife of the baker Nicolaus Haverland is said to have forgotten the bread dough in the oven, which was slowly cooling down. The pumpernickel recipe, which is still popular today, was accidentally made.

Manufacturing

In the past, no chemical additives were used in the preparation of the 100% rye bread from the Haverland bakery. Rye meal, water and centuries of experience in handling it were enough to produce this all-natural product. At just over 100 degrees, the pumpernickel matured in a 24-hour baking time, preserving nutrients. The heat sterilization at 100 degrees made it possible to preserve the pumpernickel even without preservatives. It lasted at least a year in cans.

In the meantime, the recipe has changed and in addition to whole-grain rye meal and water, sugar beet syrup, salt, barley malt extract and rye flour are now also used.
