Baked potatoes , baked potatoes or baked potatoes are unpeeled potatoes , which without the addition of liquid in the embers of a fire, in the earth oven or oven cooked. They serve as a side dish or can be eaten with herbal quark , sour cream , tzatziki , cheese , herring tip or similar. Floury varieties are mostly used for baked potatoes.

There are different variants of preparation:

  • In the simplest variant, the whole potatoes are cooked in the embers or in the oven without further preparation and eaten out of the skin. They are only seasoned when eating, e.g. B. with salt and herb butter . Or they are partially hollowed out before serving, the removed is seasoned, e.g. B. mixed with butter and cream and added to the potatoes as a filling, possibly also gratinated with cheese ( Byron potatoes ).
  • To prevent the outer areas from drying out, the potatoes can be wrapped in aluminum foil ( baked potatoes ). This procedure is common for particularly large potatoes with a longer cooking time and when cooking in the embers. This corresponds to the old technique of cooking food wrapped in large leaves in the embers. Here, too, is seasoned after cooking.
  • In another variant, the potatoes are first washed, brushed and unpeeled cut in half lengthways. Then the cut surfaces are z. B. with a seasoning mixture of butter, caraway seeds and salt or olive oil and herbs such as rosemary or thyme . Finally, the potatoes are placed with the cut surface on a greased baking sheet and baked in the oven.
