Kumpir

Kumpir is a dish made from large, floury potatoes . These are baked in special three-level ovens, with the two lower levels being used for cooking and the upper level for keeping warm. As soon as the potatoes are cooked, they are cut open in the middle without severing them completely. Loosen the inside of the potato with a fork, mix it with butter and grated cheese and top it as you like. Kumpir has now become an integral part of Turkish fast food cuisine.

Word origin

The word kumpir has passed into the Turkish language and means baked or baked potato there. Originally it comes from the Palatinate / Alemannic Grumbier or Krummbeere (" basic pear"). It was also used in this form by German-born settlers in Southeastern Europe , the Danube Swabians , where it was used as krumpir or krompir in the Serbo-Croatian language and as krumpli in the Hungarian language, and was used by Balkan Turks who had contact with these German speakers until after Anatolia spread. Unlike patates (potatoes), it refers to the prepared baked potato. More and more often one encounters this word reimported in Germany as Kumpir-ci . This is a Turkish snack bar that offers potato specialties.

history

Kumpir or baked potatoes are found in many kitchen cultures . In the country of origin Peru or by the Spaniards who brought the potatoes to Europe, they have long been roasted in the fire. The term itself comes from the Balkans , where it means "potato". There they baked them, wrapped in aluminum foil , on the grill or between coals and then served them with yogurt or butter. Allegedly, the dish was brought there by Balkan Turks who moved to Turkey from Bulgaria . In the late 1980s and early 1990s, the Turks enriched it with meze and salads. Today, the typical Turkish kumpir contains, in addition to the basic ingredients cheese ( Kaşar or Emmentaler ) and butter, optionally sour cucumbers, sucuk , olivier salad , corn, sliced vegetables (possibly blanched beforehand ) and sauces ( e.g. ketchup , mayonnaise or mustard).
