When barding (from French barde for 'bacon slice '), lean meat, especially game and game poultry , is covered with slices of fresh bacon or wrapped in order to prevent it from drying out during frying and to give it additional flavor. Smoked bacon is rarely used because it affects the taste in most cases.

So that the surface of the meat can brown, the bacon should be removed shortly before the end of the cooking time.
