Bavaria blu
Bavaria blu is a German cheese variety and brand of the Bergader Privatkäserei in Waging am See in Upper Bavaria . It is a soft cheese of the so-called white-blue form, which Camembert combines with blue mold . The brand was introduced in 1972 and is the market leader in Germany among the branded blue cheese products with a 13% market share (as of 2012). Brand development
The cheese quickly spread internationally and became a standard item in supermarkets.
In 1979, Bergader was awarded the Golden Sugar Loaf Prize from the Lebensmittel Zeitung for launching Bavaria blu .
The manufacturer indicates the market development for Germany and Austria: Sales of Bavaria Blu increased by 2.8% in Germany in 2012 and by 2.8% in Austria in 2013. The basis for market penetration is the advertising expenditure. The manufacturer advertises Bavaria Blu on television. For this product line and his Almkäse brand combined, he spends a little over 10 million euros gross each year.
features
In contrast to the Danablu (in which blue mold and milk fat deposits result in a similar marbling), the Bavaria blu is treated with two noble mushroom cultures. It is therefore a combination of a camembert and a blue cheese , which is covered with a thick and white white mold rind from Penicillium camemberti and has a marbling of blue mold inside. The ideal maturity for the cheese is given as four to six weeks. Pasteurized cow's milk from Chiemgau is used for the production . The cheese has 70% fat in the dry matter .

Various types of cheese are offered under the Bavaria blu brand:
- Bavaria blu - the delicately spicy cake and mini cake
- Bavaria blu - The spicy one with a high proportion of blue mold
- Bavaria blu - The mild one , creamy with a slight hint of blue mold
- Bavaria blu - The gentle one
- Bavaria blu - The light one , fat reduced to 25% fat
- Bavaria blu - The creamy, extra mild blue mold
