The Bergader Privatkäserei GmbH is a family owned company based in Upper Bavaria Waging am See . The company, founded by Basil Weixler in 1902, produces various cheeses at its Waging am See and Bad Aibling locations .

history

The company founder Basil Weixler laid the foundation stone for the Bergader private cheese dairy in 1902 with a village dairy. He developed a cheese similar to Roquefort in the 1920s, but used cow's milk instead of sheep's milk. The designation "Bavarian Mountain Roquefort" came too close to the French model. Weixler lost the subsequent court case, but his popularity rose due to the extensive coverage in the press. Since then, the cheese has been marketed under the name " Bergader Edelpilz ".

After the death of Basil Weixler in 1945, his daughter Charlotte Steffel took over the management. In 1979, Bergader was the first cheese dairy in Germany to be awarded the Golden Sugar Loaf for Bavaria blu , a soft blue cheese introduced in 1972 . Since 1997 the granddaughter of the company founder, Beatrice Kress, has been running the company in the third generation of the family.

In the more than 100 years of development of the private cheese dairy, other brands and varieties were brought onto the market in addition to the “Bergader Edelpilz” and the “Bavaria blu”.

Since 2011, Bergader has also been processing mountain farmer's milk in accordance with the EU funding guidelines exclusively from farms that are defined as mountain farms, so that their pastures and meadows are either over 800 meters or at a height of 600 to 800 meters above sea level on a slope of at least 18%. This cheese is sold under the “Bergader Bergbauern” brand.

Current

Bergader is the leading German blue cheese manufacturer and exporter. In 2014 Bergader produced 20,000 t of soft cheese and blue cheese , 5,000 t of semi-hard cheese as well as 7,000 t of brine cheese and filata pasta for foreign markets in Italy, Spain and France. The export share is around 35 percent.

The milk used by the dairy comes from around 1,850 farms in the foothills of the Alps. Of the family farms, around 450 are mountain farms, which have to work under difficult conditions due to the altitude and steep slopes.

Bergader operates a "cheese counter & culinary" in Waging am See, where regular cheese-related events take place. There is also a Bergader cheese counter in Traunstein.

  • Bavaria blu (also white and blue cheese, soft cheese), Bavarian blue mold / white mold cheese since 1972. Pasteurized cow's milk from Chiemgau is used for the production . The cheese has 70% fat in the dry matter and is treated with two noble mushroom cultures. The shell is covered with white mold, while the inside is marbled with blue mold.
  • Bergader Edelpilz : The blue cheese has been produced since 1927 and was the company's first cheese to be marketed nationwide .
  • Basils Original Rauchkäse : Is smoked cold over Bavarian beech and spruce wood. A naturally ripened semi-hard cheese with a hearty taste, named after the company founder Basil Weixler.
  • Bergader Almkäse : semi-hard and soft cheese in different flavors
  • Bonifaz : various types of soft cheese.
  • Bergader Bergbauern : Sliced ​​cheese and soft cheese made from mountain farmers' milk from Upper Bavarian suppliers
