Beaumont (cheese)

The Beaumont is a French raw milk cheese from cow's milk , the first time in the village of Beaumont near Geneva is manufactured in Switzerland and today in the Rhône-Alpes is produced. It was one of the first raw milk cheeses to be produced on a large scale. It is therefore also known as Industriel cheese.

The loaf of a mature Beaumont has a diameter of 20 centimeters, a pinkish-yellow rind and a height of four to five centimeters. The fat content in the dry matter is about 48%. The cheese is ripe after storage for four to six weeks. During this time, the cheese is washed several times.

Vin de Savoie goes well with this cheese .
