Benedict Faust

Benedikt Faust (born June 7, 1978 in Marktheidenfeld ) is a cook and restaurateur in Würzburg .

Live and act

In 1993, Faust began training as a chef at the Anker wine house in Marktheidenfeld. Since 1996 he has worked as Commis de cuisine , Demi Chef de Partie, Chef de Partie and Souschef in various first-class restaurants, such as the Schweizer Stuben in Wertheim-Bettingen. Among his teachers was Juan Amador , who is considered one of the most important representatives of molecular cuisine in Germany.

The Kuno 1408 restaurant in Würzburg

From April 2013 to the end of 2019, Benedikt Faust was the head chef of the Kuno 1408 restaurant in the Hotel Rebstock in Würzburg (1737 to 1741 with an elegant stucco front that was partially reconstructed after 1945) . The restaurant is named after the first owner of the Hof zum Rebstock in Neubaustraße and offspring of the knight family of the same name. As the successor to Franz Frankenberger as head chef, Faust heads the kitchen of the four-star hotel and leads a 15-person kitchen team. After more than two years of planning, the restaurant area and kitchen of the Rebstock were completely renewed in August 2013 with the assistance of the catering consultant Pierre Nierhaus .

The restaurant's menu features traditional Franconian dishes made from regional products, which Faust has completely "reconstructed" and completely reinterpreted. The minimalist menu often only names the ingredients of its dishes.

honors and awards

  • In 2007 he achieved a Michelin star for the first time for the Romantik Hotel zum Stern in Bad Hersfeld. He was able to confirm this at the Hotel Hanseatic on Rügen, where he had been working since March 2011. In the 2014 edition of the Michelin Guide , his restaurant Kuno 1408 was also awarded a star.
  • In 2010 he was awarded the title “Discovery of the Year” by the Frankfurter Allgemeine Zeitung.
