Berbere
Berbere ( Amharic በርበሬ bärärre , Tigrinya በርበረ bärärä ) is a hot spice mixture that is native to Ethiopian and Eritrean cuisine and plays an important role there, for example for the dish Doro Wot.
The preparation of the mixture can be no single recipe, but essential ingredients are chili pepper , ginger , cinnamon , garlic , clove , coriander seeds , allspice , Ajowan and the dried fruits of rue . In addition, there are also little known ingredients outside of Ethiopia and Eritrea, such as the fruit of the stick pepper .
