The Berliner bread is a Christmas cookie from the Bergisch Land , which in Italian biscotti recalls, but it is baked only once. There are different types of Berlin bread. Whole roasted hazelnuts or almonds are mixed under a heavy dough that is similar in consistency to a gingerbread dough and gives the sugar beet syrup , cocoa or chocolate a very dark color .

The syrup is often replaced by farin sugar in modern recipes , which changes the color and taste. The dough is baked on a baking sheet and cut into narrow strips while it is still hot. After cooling, the baked goods will be very hard if they are not packed airtight and lukewarm. However, if it is stored in tin cans or other closed containers, it will crumble after a few days. Berlin bread can be stored for a few weeks.
