Cantuccini (also Cantucci or Biscotti di Prato ) are traditional almond biscuits from the Italian province of Prato near Florence . Like rusks, they are baked twice, first as long loaves and then in slices, which makes them crumbly and durable.

Cantuccini contain u. a. Almonds , flour , sugar , amaretto and various spices such as cardamom , cinnamon , cloves and star anise .

Cantuccini are often eaten with Vin Santo , in which they are immersed.
