Biryani ( Urdu بریانی; Hindi बिरयानी IAST biryānī ) is a hearty rice dish from Asia. The name Biryani comes from the Persian wordبریان beryān and means "fried", "roasted". In contrast to pilaf , the dish is characterized by the fact that rice is seared before cooking. Regional and local variants are common in the Middle East to Southeast Asia.

To prepare an original biryani, rice is traditionally fried in ghee , which gives it a nutty aroma. Then the rice is boiled in water with spices until it is about half cooked. In addition, meat, preferably goat, is marinated, originally in yogurt, papaya and various spices, and, if necessary, pre-cooked. The rice and meat are poured into a pot (made of ceramic or cast iron) in layers, starting and ending with a layer of rice. Optionally, other ingredients, vegetables and spices can also be incorporated. The pot is covered and heated on the hob until the biryani can be served.
