Borāni is the name of a type of Persian starter or side dish that consists of yogurt combined with vegetables like spinach , eggplant , beetroot or celery and spices like cinnamon , saffron and peppermint in addition to salt , pepper , onions , garlic and lime juice .

The dish was named after the Sassanid queen Pourandokht (Boran), for whom it was developed due to her fondness for yogurt. The name Borani developed from the initial Pourani .
