A bread sommelier is a sommelier who specializes in bread and its variety of varieties . It is a further training course within the bakery trade with the aim of training experts on the subject of bread, who can pass on their specialist knowledge, which is largely unknown to the general public, to their customers and other groups. The prerequisite for qualification is a successful training as a master baker or a comparable qualification in the food industry, e.g. B. a completed degree in the field of nutrition or grain science.

There are currently 88 certified bread sommeliers in Germany, 3 certified bread sommeliers in Austria, 1 certified bread sommelier in South Tyrol / Italy and 1 certified bread sommelier in Switzerland (as of November 2019).

Training in Germany

Since 2015, the Akademie Deutsches Bäckerhandwerk Weinheim has been offering advanced training to become a certified bread sommelier (female: certified bread sommelier ). At the end of the course, there is a state-recognized examination by the Mannheim Rhein-Neckar Chamber of Crafts , which comprises a total of eight parts. During the training in Weinheim , speakers from science and practice impart knowledge from the fields of bread culture, national and international bread market, the basics of sensor technology and bread sensor technology , bread types to the participants for eleven months part-time (with eight modules of three days each, including HWK exams) all over the world, food pairing (which bread goes with which wine, cheese, beer, etc.), bread aroma wheel and Weinheimer bread language , qualitative assessment of bread and many other sub-areas.

The advanced training course to become a certified bread sommelier was awarded the Baden-Württemberg advanced training award in 2015.
