Capreggio

Capreggio is from the Switzerland native goat cheese . The name is derived from the Italian word capra (goat).

Capreggio is made from raw goat's milk and has a content of at least 45% F. i. T. and matures 7 to 10 weeks. The texture of the soft cheese is similar to Taleggio made from cow's milk . It is produced in Toggenburg and Eschental in Piedmont , for example .
