Chapulines ( American Spanish , borrowed from Nahuatl chapolin ) are locusts of the genera Sphenarium , Schistocerca , Taeniopoda , Trimerotropis , Spharagemon , Plectotetra and Melanoplus , which are used as food insects in Mexico .

Especially in the state of Oaxaca, chapulines are roasted from spring to autumn as a snack at markets.

For preparation, chapulines are usually first blanched , then deep-fried or roasted in a flat pan called comal and seasoned with salt and lime or lemon juice , sometimes with chilli and garlic . The legs and antennae are removed prior to preparation or consumption.
