Chermoula or Charmoula ( Arabic شرمولة, DMG Šarmūla ) is a marinade used in Algerian, Moroccan and Tunisian cuisine. Usually it is used for fish or seafood, but it can also be used for meat or vegetables.

Chermoula consists of the two fresh basic ingredients garlic and coriander and usually contains oil, pickled lemons and / or lemon juice, cumin and salt as additional ingredients . There are various recipes with additional spices, depending on the region. Chermoula can also contain onions, paprika powder, black pepper and / or saffron . The mixing ratios are very different.

A Moroccan version includes parsley, dried cumin, paprika powder, salt, and pepper. It is the original mix of spices for grilled meat and fish in Moroccan cuisine.
