Chilbisenf

Chilbisenf ( Swiss German for “Kirchweih mustard”), Bénichon mustard or Moutarde de Bénichon is a mustard specialty from the Swiss canton of Friborg . It is a very sweet mustard that is eaten as a spread with Freiburg saffron bread (a type of brioche , known as cuchaule ).

Chilbisenf consists mainly of ground mustard seeds and white wine and also contains cinnamon , star anise , cloves and sugar candy .

The French name Moutarde de Bénichon is mentioned for the first time in 1852, but the mustard product is much older. The Fête de Bénichon , where this is offered, is a traditional annual festival in the canton of Friborg that goes back to the parish fair and the harvest festival and takes place between July and December, depending on the municipality.
