Cotechino

Cotechino (from Italian cotenna , "rind") is a heavily spiced, Italian raw sausage made from pork .

For the preparation of pork , pig's head , lean pork and Schwarte chopped medium-fine, with salt and pepper grains seasoned, in hog filled and dried in a wood stove and at the same time easily cooked.

The perishable cotechino is cooked for consumption. To do this, it is pierced all around and left to simmer in water over a mild heat for about two to three hours. Cotechino is part of the Bollito misto .

Like the zampone , it is eaten in Italy, especially at the turn of the year, with lentils and mashed potatoes or polenta .
