Crescenza is a short-ripened Italian soft cheese . It is also known by the popular name stracchino . This name probably comes from the time when the milk producers in Lombardy drove their cows from the hill country into the plains in autumn. The cheese was made from the milk of the tired animals (in the dialect “stracch”). It is mainly produced in Lombardy and Veneto , partly also in Piedmont .

Manufacturing
