The Croquembouche , also Croque en bouche ( French “cracks in the mouth” ) or Pièces montées ( French “assembled pieces” ), in German  also Krachgebäck , is a cake of French cuisine .

It consists of a pyramid piled with vanilla cream or whipped cream -filled cream puffs that of caramel are held together or icing. A croquembouche is traditionally baked on festive occasions, especially as a wedding cake . The pyramid can be 50 cm and higher.
