Crottin de Berry à l'Huile d'Olive

from Wikipedia, the free encyclopedia

Crottin de Berry à l'Huile d'Olive is a French cheese specialty . Small goat cheeses, which are characterized by a mild and soft taste, are placed in olive oil that is seasoned with pepper , thyme , rosemary , bay leaves , juniper berries and garlic . A certain type of cheese is not used.

The French cuisine knows a number of similar specialties. This includes Le Pitchou , for example , although only Saint Marcellin cheese is used, which is made from pasteurized cow's milk . There are also Fromage fort cheese specialties such as Confit d'Epoisses , which, similar to Crottin de Berry à l'Huile d'Olive, have developed from the preservation of cheese types that are not particularly durable or the desire to process cheese residues.
