Le Pitchou

Le Pitchou is a French cheese specialty in which loaves of Saint-Marcellin are placed in small glasses and covered with a marinade made from grape seed oil and herbs from Provence . The originally mild and slightly sour cheese develops a strong and spicy taste. Only those Saint-Marcellins are used that are made from pasteurized cow's milk . Raw milk cheese made from goat's milk - also a variant of Saint-Marcellin - are not suitable.

The specialty is eaten with bread. The right wine is a Côtes du Rhône .
