Dirty rice is a traditional dish in Cajun cuisine .

It consists of rice that is cooked together with poultry , especially chicken livers and stomachs, which give it its characteristic dark ("dirty") appearance. Similar to a pilaf , the “Holy Trinity” of Cajun cuisine, sweet peppers , onions and celery , are part of the dish. Parsley and spring onions are common additions.

The dish is most widespread in the Cajun areas of Louisiana and Mississippi , but is also widespread in other regions of the US southern states . Because of its only regional distribution, the US Army renamed the dish Cajun rice with sausage ("Cajun rice with sausage") when it was offered in a one-man package for troop catering, as many soldiers from other states believed it was doing business actually dirty rice.
