Dolcelatte ( Italian for sweet milk ) is an Italian mold cheese .

Basically, it is a soft cheese that is factory-made like Gorgonzola without meeting the requirements of the protected designation of origin . However, the name of the cheese is a registered trademark of the Galbani company . Dolcelatte is produced as a full-fat cheese with 48% fat in the dry matter from pasteurized cow's milk with the addition of noble mushroom cultures. Since it has no maturity phase, it is rindless.

Torta Crema (a replica of Gorgonzola con Mascarpone ) is also made as a layered specialty under the same name .

Dolcelatte was developed by the Italian cheese manufacturer Galbani especially for the British market as a softer Gorgonzola variant.
