Dorayaki ( Japanese ど ら 焼 き ) is a dessert ( wagashi ) of Japanese cuisine . It consists of two pancakes filled with sweet red bean paste ( azuki ) and, if freshly made, served hot. There are other fillings such as chestnut and rice cake .

Etymology and history

Dorayaki were developed in their current form in 1914 in the Usagi-ya confectionery in Tokyo. The part of the name dora means gong . The pancake has a shape similar to a gong. In Kansai , Dorayaki Mikasa are called, referring to the mountain Wakakusa near Nara , which is colloquially called Mikasa.
