An eclair [ eˈklɛːɐ̯ ] ( French éclair , "lightning"), also known in Germany as a love bone , hare's paw or coffee stick , is a 10 cm long, filled pastry made of French choux pastry . The filling can consist of strawberry, raspberry, coffee, chocolate, vanilla cream, cream or pudding . It is often covered with fondant or a glaze .

The name should be derived from the fact that the pastry is eaten as quickly as "lightning". The French chef and confectioner Jules Gouffé in his livre de pâtisserie (pastry book; published 1873) describes eclairs as “pains à la duchesse”, but notes that they have been referred to as “éclairs” for twenty years.
