Ester number

The ester number (EZ) is used for characterization and analytical-chemical quality control of glycerides ( fats , oils and waxes ). The ester number is one of the fat indicators .

The ester number denotes the mass of potassium hydroxide in milligrams that is required to hydrolyze ( saponify ) the ester bonds of the neutral esters contained in 1 g of fat .

The ester number is calculated using:

Ester number = saponification number (VZ) - acid number (SZ)
