Etorki is from sheep's milk produced hard cheese from the French Basque Country , a product of the Group bongrain (formerly Bongrain).

Sheep cheese has been made in the French Pyrenees for around 4000 years . Today, the Etorki is the most famous representative of this tradition. It matures in brine- soaked cloths, which gives it a firm, orange-colored rind.
