Fat end

As fat end (fat intestine) in slaughter animals is defined as the rear parts of the rectum . While the term is narrowed down in some slaughtered animals ( cattle fat , pigs fat ), the rectum of the sheep is called fat end . In general, it is understood to mean the anal sphincters and the 50 to 100 cm long rear section of the intestine including adhering intestinal fat.

In the meat of this product is as a sausage casing for the production of cotechino , sausage and Guts meat sausage used.
