Fat separator
A fat separator pot (also fat separator , Fettabschöpfer or Fettreduzierkanne ) is a small, used in the cooking pot from glass , porcelain , metal or plastic , whose beak (spout, nozzle) is down, attached close to the can bottom, so that the lower aqueous phase slightly can be separated from the upper fatty / oily phase.
Function and principle
During work in the kitchen, the fat separating jug is used to remove most of the fat from liquids that contain fat or oil before further processing.
Oils and fats are only partially soluble in water. If a fat / water mixture, for example a stock , a sauce or a soup, is poured into the fat separator and left to stand, the phases separate after a few minutes. You can then carefully pour off the lower aqueous phase - and possibly add more liquid to be separated - and after separation you have the option of being able to process both the aqueous and the fatty / oily phase further.
Fat separation using this small jug allows you to continue using flavor components (for example in the aqueous phase of a brew) if you want to avoid too much fat in your diet for health reasons and therefore want to separate it.
Alternatives
Alternatives to skimming off fat or oil are carefully skimming with a trowel or cooling / freezing and removing the hardened upper phase.
Fat separator
If you only want to decide during the meal whether you prefer the fat or lean portions of a sauce, for example, you can use a specially designed sauce boat to separate fat.
