Fish products are foods from fish that are made even by various methods, prepared to consume or preserved by drying. Fish parts are also among the fish products, as is cooking using ingredients.

According to the “Guidelines for fish, crustaceans and molluscs and products made from them”, fish products are designated according to their type and manufacture. If the designation or the pictorial representation emphasizes ingredients, then these ingredients are present in a clearly flavor-defining quantity (e.g. "herring fillet in cream sauce" or "cream herring fillet" but not "cream fillet").

Fish salads are preparations made from shredded fish products, vegetables, fruit, spices and sauces. Mayonnaise, salad mayonnaise and other emulsified preparations are common sauces, optionally made from cooking oil, vinegar, cream, yoghurt, crème fraîche and other flavoring or enjoyment-enhancing ingredients. Fish salads made with mayonnaise are classified as delicatessen salads. Salads with meat from fish are described in the guidelines for delicatessen salads.

Differentiation between canned fish and pasteurized fish products

The only difference between canned fish and pasteurized fish products lies in the temperature during the preservation process; in the trade, the two fish products cannot be distinguished without express notice.

Pasteurized fish products are cooked below 100 ° C and have a limited shelf life, so they can also be viewed as semi-preserved .

Long-term canned fish are sterilized at over 100 ° C , so that all germs are killed. Long-term fish preserves are in particular:

  • Fish products in their own juice, infusion, in oil, in sauces (sauces, dips) or creams;
  • Fish pastes : spreadable masses made from finely chopped, bones-free fish parts, with or without the addition of fat, binding agents and spices;
  • Fish pies : preparations of fine fish (eg eel, salmon, trout.) And fine ingredients
  • Fish dumplings , fish dumplings , fish balls, fish cakes
  • Starters or hors d'oeuvre with added fish
  • Products made from fish with the use of fine vegetables, mushrooms, fruits, among others, in oil, infusions, sauces (sauces, dips), creams.
