Anchosis

Anchos (from Spanish and Portuguese ; pronunciation like "an Schosen") are semi- preserved foods made from fresh, frozen or deep-frozen fish, especially anchovies , sprats and herring . During production, the raw fish is enzymatically matured by soaking it in salt , sugar , herbs and spices for several weeks . As a rule, saltpeter is used for this, and curing salt is also used in industrial production . Depending on the recipe, anchoses are prepared with spicy, often slightly sweet infusions, sauces, dips, creams or oil. Even when refrigerated, they can only be kept for a comparatively short time.
