Flummery

Flammeri (English: flummery , French: flamri ) is the technical term for a creme bound with starch. For example, vanilla pudding is correctly a "vanilla flammeri". Cooked creams (also known as patisserie or filling creams ) are flammeris from a gastronomic point of view. The term is rarely used today because the industry has shifted the terms with the pudding powder .

The dessert can be made from semolina, rice, potato starch or sago with sweetened milk. This method of preparation is often inappropriately referred to as pudding . The difference to pudding is that flammeris are bound by the swelling of the starch , whereas eggs are the binding agent in puddings.

Flammeri can also be prepared with white wine instead of milk and served cold. Probably the best-known version of Flummery is made from semolina, white wine or sherry with lemon syrup , egg yolk and brandy, mixed with gelatin.

The addition of egg yolks, fruit juice, raisins and spirits is possible. A Flammeri can contain gelatin and can be fluffed with whipped cream or egg whites . Flammeris are offered in portion containers or turned upside down, served with fruit sauces , fresh fruits or chocolate sauce . The industry offers a selection of convenience products .

The English word flummery actually means porridge (from Welsh Ilymru), the origin is unclear.
