Fleur du Maquis

The Fleur du Maquis is a Corsican cheese. It is a so-called Artisanal cheese , in which the manufacturer is allowed to use purchased milk in addition to the milk from their own animals. The name of the cheese is derived from the French name maquis for the Corsican bush forest. The surface of the cheese is usually decorated with appropriate maquis spices such as savory , rosemary and juniper . The cheese gives off an intense smell of these dried herbs. As with Brin d'Amour, the dough is ivory-colored and slightly sour. The cheese ripens for one month.

The Fleur de Maquis usually has a square shape with an edge length of ten to twelve centimeters. The height of the cheese wheel is between five and six centimeters.
