Frittatensuppe (also Flädle- , Eierkuchen- or pancake soup ) is a dish made of a broth of beef with strips of pancakes as a deposit. The word frittaten is derived from the Italian frittata from frittieren.

In preparation, pancakes are baked from a slightly runny batter. After cooling, these are rolled up and cut into strips. The result is then called Frittaten (Austrian) or Flädle (Swabian). Just before serving, you put them in the plates or cups and fill them with the broth.

Alternative names

  • Germany: In the Swabian and Baden food, the court will as Flädle- or Flädlessuppe , in other parts of Germany as a pancake soup means derived from the regional name for pancakes,. In Jewish recipes it is called fanzel soup , and the pancakes can also be cut into a diamond shape. In Bavaria, on the other hand, people generally speak of a pancake soup .
  • Austria: In Viennese cuisine and large parts of Austria, the dish is referred to as fried potato soup . In the Alemannic Vorarlberg, the name Flädlesuppe is also used.
  • Switzerland: In the Alemannic-speaking part of the country, the dish is known as Flädli soup .
  • Italy: A similar dish there is called Brodo con tagliolini di crespelle , where, in contrast to other variants, chicken broth is used.
  • France: In French and the international cuisine of other countries influenced by it, the dish is called Consommé Célestine . Freshly chopped herbs are often added to the dough.
  • Hungary: After the deposit it is called palacsintatészta-leves in Hungary .
