Gilles Canouet (born January 20, 1976 in Rueil-Malmaison ) is a former French road cyclist.

Gilles Canouet won the two French one-day races Prix du Léon and Circuit de la Nive in 2001. At the Tour de Gironde he won the second stage and was able to win the overall standings. In 2005 he became a professional with the French Professional Continental Team Agritubel . In his first year there, he won the one-day race La Roue Tourangelle .
