A large kitchen is referred to as a large kitchen for commercial use, primarily in gastronomy and communal catering (hospital, factory kitchen, cafeteria ). According to the Duden, it is either a large kitchen in a hotel or a canteen , in which meals are regularly cooked for a large number of people, or a company that prepares and delivers food for bulk buyers ( catering ). The Food Monitoring , Animal Welfare and Veterinary Service of the State of Bremen (LMTVet) defines large kitchens as facilities that produce at least 200 meals a day and either hand them in on site or deliver them to other distribution points.

Large kitchens are subject to official controls, e.g. B. by health and veterinary authorities , they must meet certain structural requirements (also with regard to occupational safety ) and meet hygiene standards with regard to food safety . The construction of the large kitchen appliances used differ significantly from household appliances, u. a. using the rustproof material stainless steel and an industrial standardization , for example the gastro-norm container. Large-scale kitchens are characterized by a high degree of automation and rationalization of work processes as well as consistent work preparation . So-called device chains are used and convenience products are often used.
