Hamburger Speck is a confectionery made from sugar foam that is traditionally offered in Hamburg's national colors red and white , but also in yellow and pink . In Austrian cuisine, this term does not mean a sweet, but smoked bacon.

etymology

It got the name because of the plate shape , which is reminiscent of mixed bacon . The sweets are also known as “Helgolänner Speck” or “Helgoländer Schnitten”, but then in the colors red, white and green .
